The long-awaited opening of the Turbine Wine Bar is set for tonight – a year after it was originally scheduled to open its doors.Nahant resident Stephen Hanley, 40, said he decided to scrap the initial concept for a European style cafe and wine bar, and completely revamp the site of the former Gulu-Gulu Café at 56 Central Square.”We changed everything, every inch,” he said. “I originally intended just to make a few changes, but as I got more into it, I invested more and more to deliver a higher quality product for the city.”The new design features a sleek 22-foot long concrete slab bar, with a smaller 10-foot long nook off to the side, which will feature sushi offerings and beer and wine tastings.Complimenting the bar, is the building’s original 70-foot long brick wall, with an open concept layout and red walls, giving the space an eclectic and industrial feel.”It was extremely costly to do and was a work in progress for sure,” he said. “It cost three times my original budget and took three times longer to do, but at some point during the design stage, I realized that if we didn’t ratchet it up, it wouldn’t (be) as successful.”Hanley, who has a background in sales with several firms, has worked in the venture capital side of the business as well. His family previously owned Maddie’s Sail Loft in Marblehead before selling the business.With his knowledge of restaurants and input from city officials, Hanley also decided to switch up the menu and signed on a chef, Lynn resident Dorothy Kaiser.Trained at Le Cordon Bleu, and a former employee of the now defunct Oxford Street Grill, Kaiser took Hanley’s menus, which previously offered a selection of pressed sandwiches, to the school where her colleagues offered helpful tips to make it more appealing.”They constructively criticized the heck out of it,” he said. “But we learned a lot and the new menu is much broader.”The menu will consist of small plates for about $12 each, featuring filet mignon, chicken satay, tuna miso trumpettes, sweet potato and goat cheese ravioli, and lobster fontina sandwiches. A selection of cheeses will also be offered.”We also expanded the wine list, so we have a lot of wine that represents every region of the world,” he said. “There’s something for everyone and I’m really excited to open.”The restaurant will be open Tuesday-Saturday, from 5-9:30 p.m.
